Featured Chef Program

The Featured Chef Program is a hands-on, nonprofit initiative operated by the Mill Street Opportunity Alliance through the Incubator Kitchen. It provides emerging food entrepreneurs an opportunity to test menu concepts, build a customer base, and gain real-world business experience, all while supporting the local food economy.

This program is a critical step in the entrepreneurial pathway, helping chefs and food producers move from concept to sustainable business in a supportive, educational environment.

Program Purpose & Impact

The Featured Chef Program focuses on:

  • Entrepreneurial training – giving chefs the chance to apply business skills in a real-world setting

  • Market access – allowing participants to showcase products to Mill Street Market customers

  • Community engagement – introducing residents to locally produced, high-quality food

  • Support for the local food economy – helping small producers expand sales and build sustainable operations

By providing these opportunities, the program aligns directly with the mission of the Mill Street Opportunity Alliance to strengthen the regional food system through entrepreneurship, education, and community partnerships.

How the Program Works

Participating chefs reserve a Featured Chef day to prepare and serve a special menu item or limited menu in the café. The program encourages a weekly rotation, allowing chefs to return regularly, build relationships with customers, and test new ideas over time.

To participate, chefs will:

  1. Reserve a Featured Chef day through the Mill Street Incubator Kitchen program

  2. Prepare a set number of servings for the day

  3. Use the Mill Street Incubator Kitchen for all food preparation

  4. Follow all kitchen, food safety, and operational guidelines

During the event, chefs gain direct customer feedback, refine menu items, and develop a consistent presence in the café to establish a following within the community.

Next Steps in the Incubator:

  • Continue producing in the kitchen to scale products

  • Refine recipes and menus based on feedback

  • Expand into retail, wholesale, or other Mill Street Market programs

Note: Kitchen access is offered at a discounted rate to support food entrepreneurs and reduce barriers to entry.

Who Can Participate
  • New food entrepreneurs who have completed or are enrolled in the Entrepreneurial Education program

  • Participants gain hands-on experience in a licensed commercial kitchen and access to mentorship from experienced chefs and business professionals

  • Experienced local chefs, caterers, and specialty food producers who are ready to test menu items or products, or are looking for another outlet to feature their items

Preparing the Food

All Featured Chef meals must be prepared on-site in the Mill Street Market incubator kitchen. This ensures food safety compliance while giving chefs access to a fully licensed commercial kitchen environment.

Chefs may develop their own recipes, menus, and flavors, allowing them to introduce customers to new cuisines, seasonal dishes, and creative food concepts. Weekly participation encourages menu evolution and seasonal experimentation.

What Happens to Remaining Meals

At the end of the service day, any remaining meals may be packaged as ready-to-eat items and sold through the Mill Street Market Farm Stop. This ensures minimal waste while giving chefs additional visibility and revenue.

Vendors may also work with the market team to determine other approved uses for remaining food as appropriate.

The Featured Chef Program will launch once the Mill Street Market Campus opens. More information about scheduling, weekly participation, and kitchen access will be available as the program approaches launch.
